Autumn's here and that means EASTER! (& homemade Easter eggs)

Autumn and Summer are my two favourite seasons. Luckily they are right after each other so I get to enjoy the warmth and sandy feet that summer brings and then before I can get the 'Summer has gone away blues' Autumn is right there with its beautiful colours and piles of pretty leaves to scrunch!

I also love Autumn because that means Easter is just around the corner. I actually love it so much I wanted to have a Autumn themed wedding but Wellington doesn't have any pretty places where leaves collect, its so windy they just blow away!

Last year for Easter I made my own cream eggs. They were painstaking and took about 2 hours but were pretty cool in the end. For Easter this year I've decided to make my own Easter eggs from moulds. I've got the moulds already and am hoping to put different flavours in the centre like a coconut/ bounty bar kinda filling, chewy caramel and mint cream. Happy Hunger Games! May the odds be ever in your favour.

One of the most anticipated movies of this year has to be The Hunger Games. I read the books last year (by recommendation from a friend) and really loved them! So in honor of the movie release this week I wanted to make something special. I decided on Hunger Games cupcakes.

I made them banana caramel flavored which was also a first for me. Banana cake and caramel is a winning flavor combo that I just discovered a few weekends ago. We went out for a coffee after our shopping and I tried a banana caramel cupcake- Ahmazing! My new favourite cupcake.

 Here are some pictures for you. Basically you just use any banana cake recipe, fill them with caramel sauce or caramel condensed milk, then ice them with caramel flavoured icing. I bought a caramel essence (Hansells) from the supermarket which worked a treat! It smells and tastes divine, plus is made from 100 percent natural ingredients which I love because so much baking stuff is full of freaky chemicals these days.

To make the Hunger Games toppers I just used a print out of the Mockingjay (identical to the picture above) and traced over it with chocolate onto some baking paper, put it them in the freezer and your done.

Awesome yummy cake by Alex

A few weekends ago our lovely friends Alex and Dan come for dinner. The person who's house it is usually makes the dinner and the other person brings  dessert. This time it was it our place so Alex brought dessert and oh my! It was one of the most delicious cakes EVER! I wanted to share it with you blogger friends, but I kept forgetting to post it last week, anyway here it is.

Date and Apple Cake with Coconut Topping
(makes a 20cm cake)

2C peeled and diced apple
1C chopped stoneless dried dates
3/4C boiling water
1tsp baking soda
1C sugar
1 egg (room temp)
1tsp vanilla essence
11/2C flour (you can replace with gluten free baking mix)
Coconut topping

Preheat to 150C. lightly grease 20cm cake tin ad line base.

Place apple  dates into bowl and sprinkle with baking soda. Add water and cool.

Place butter and sugar into a bowl and beat until smooth, pale and creamy.

Add egg and vanilla essence and beat until combined. Add flour and fold in followed by apple and date mix with any liquid.

place into cake in and smooth surface. Bake for 55 to 60 min and remove from oven. As quickly as possible place coconut topping on cake. Place bake into oven adn bake for an additional 10 mins. Place on cooling rack and when cool remove from tin. Store in airtight container for up to 4 days.

Coconut topping:
60g butter (diced)
1tbsp milk
150g brown sugar
1C desiccated coconut

Place butter, milk, sugar and coconut into a saucepan, set over a low heat and stir till butter and sugar have melted and ingredients are combined.

We had some left and had it the next day! What an awesome morning tea snack it makes, I felt like even the coffee tasted better because of its deliciousness  :)

Brownie confessions

So as most of you know I'm a self confessed bakeaholic and pride myself on baking everything I make from scratch. I've heard rumors that packet brownies are just as good as homemade and I thought I'd put this hearsay to the test!

Last week I baked my very first packet mix brownie and to tell you the honest truth is wasn't half bad I mean it was no salted caramel brownie but it was pretty good! If your not the most experienced baker this is pretty much the easiest baking can get Add three ingredients, mix and your done!

Step one:

Add a 2 tablespoons of oil, 2 eggs and a tablespoon of water

Step two:


Step three: 

Pour into a brownie or slice pan

Step four:

Bake for 25 mins at 180

Step five:

Slice and your done!
